Pesto Chicken Grilled Cheese Sandwich
Chicken grilled cheese sandwiches with pesto are a great quick and easy meal that kids and adults alike will love. Crusty sourdough bread is layered with basil pesto, CHEF'S CRAFT® Grilled Chicken Breast Fillets, and plenty of provolone cheese before being toasted and grilled on a skillet!
Add colorful ingredients to plates when you serve this sandwich - mini bell peppers, carrots, and sugar snap peas all off great crunchy texture in a variety of colors! Adding fruits like raspberries, blueberries or fresh cherries add a great juicy burst of flavor and color, too.
Makes 2 sandwiches.
- 2 CHEF'S CRAFT® Grilled Chicken Breast Fillets
- 4 slices of crusty bread, like sourdough or French bread
- ½ cup basil pesto
- 4 slices provolone cheese
- 4 spreads of butter
Heat the CHEF'S CRAFT® Grilled Chicken Breast Fillets according to package directions.
Heat a large skillet over medium-high heat.
Smear one side of each piece of bread with pesto.
Place provolone on top, followed by the CHEF'S CRAFT® Grilled Chicken Breast Fillet, followed by more cheese, and then topped with the second slice of bread. Spread butter on top of the sandwich.
Carefully place the sandwich on the hot skillet, turning the sandwich over as you do so that the buttered side is now facing down into the skillet.
Butter the top piece of bread.
Fry each side of the sandwich until golden and crispy. The center should be hot, and the provolone should just begin to melt out the sides.
Serve alongside your favorite soup or salad!
